100% Pinot Gris, cultivated on a sandy soil. The grapes are de-stemmed, undergo a long, 8-month maceration, followed by fermentation and maturation in closed clay amphorae. In time, the wine will be separated from the skins by racking, then be matured an additional 2 months in acacia wood barrels. Total production is 8000 bottles. A very light dose of sulphites at bottling.
