100% Savagnin (1/3 of Savagnin Rose), from young vines farmed organically at Les Bois d’Arnaux, a vineyard site planted in 2015, with clay-limestone soils over Triassic marls. The grapes were harvested by hand on the 18th of September 2018. Vinification: destemmed grapes are macerated for 35 days, then fermented in demi-muid barrels and stainless steel tanks, and matured two years in demi-muid barrels that have seen of several wines. Bottled on the 25th of June 2020 (a fruit day according to the biodynamic calendar). Neither fined nor filtered, and zero sulphur.
Valentin Morel was a government officer in a French prefecture in 2014 when, in rather dramatic fashion, he left his post… and returned home to reconnect with his family’s farming roots.
