A blend of Grenache Noir, Mourvèdre and Carignan, from old vines cultivated organically (the entire estate is certified organic by Ecocert) and planted on clay soils. Grapes are harvested by hand using small crates, and only in the morning. The yields are kept under tight control. Natural and non-interventionist vinification, fermentation is completed in barrels, followed by maturation in old wood barrels. Bottled with no fining or filtration, and zero sulphur. 24 months of aging in bottle at the estate before commercialisation. Decanting is recommended.
