A blend of 70% Carignan and 30% Grenache Noir, the vines are 70 years old, planted on rolled pebbles on alluvial terraces. The parcel is situated on the bank of La Palme's pond. The estate is certified organic. Manual harvest in small crates, only in the morning. Vinification: 15 days maceration in whole bunches in truncated cone shaped vats, end of slow fermentation and 7 months of aging in wooden vats that have seen several wines. Bottled on April 30th, 2021 with 1.5 g of sulfur.
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
