A 100% Syrah from the vineyard site known as Tamaris, a terroir of worn pebbles on clay-limestone soils, on a gentle slope near the banks of the Palme lagoon. The estate is certified organic. Grapes are harvested by hand using small crates, and only in the morning. Vinification: maceration of whole bunches for 20 days, with a little pumping over. Fermentation finished in barrels then matured 10 months. Bottled before the end of fermentation with zero sulphur. Decanting is recommended.
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea. After choosing to study viticulture and oenology, he inherited his grandfather’s vines. So began his adventure in wine, which initially was limited to selling his grapes to the local cooperative.
