A blended cuvée: 60% Cabernet Franc (66 years old) and 40% Alicante, grown on iron-rich clay-limestone soils in the commune of Cessenon-sur-Orb (in the Saint-Chinian appellation area). An almost purely symbolic yield: 5 hl/ha! Vinification: a parcel of old vines facing north and very late ripening, vinified by millefeuille (in successive layers of grapes, some destemmed and other whole cluster, etc...) Maceration 45 days in earthenware jars, matured in vats for 10 months. Neither filtered nor fined, with zero sulphur added. 1200 bottles produced.
