A blend of 60% Syrah, 30% Carignan and 10% Macabeu, from parcels in the Pech-Redon area, on a terroir of alluvial terraces on the bank of the La Palme's pond. The estate is certified organic. Manual harvest in small crates, only in the morning. Vinification: direct pressing, light settling of 12 hours to keep the substance, fermentation and maturing in stainless steel vats on lees for 6 months. Bottled at the beginning of Spring, without added sulfites.
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
