A nose of rare elegance, with lemony and candied notes, flint stone, dried lime blossom, and white flowers... A palate at once powerful and chiselled, ultra saline, with humungous minerality, and a finish of lovely, mineralesque bitter notes.

A single-vineyard cuvée: 100% Chenin from old biodynamic vines planted at the beginning of the 1980s in St-Lambert-du-Lattay, on an exceptional terroir of shallow sandstone and rhyolite soils. The grapes are harvested by hand with small crates. Vinification: direct pressing, transfer into barrels for fermentation and 6 months of maturation – half in 600-litre oval demi-muids and half in 300-litre “cigar” barrels (longer in shape). Bottled without fining or filtering, followed by lengthy bottle ageing on the estate.

Formerly a high-level judoka, today in his thirties Boudignon brings the same precision and rigour to his work in wine. He boasts an impressive CV, having trained at some of the greatest estates of Bordeaux, the Loire and Burgundy, notably with Philippe Charlopin in Gevrey Chambertin. It was finally in 2008...
