A Sauvignon cuvée from a 3-ha parcel planted on a clay-limestone soil, located in the commune of Verdigny. The vines are 30 years old and the yields around 35 hl/ha. As for the vinification: 3 months of maceration in old barrels, with malolactic fermentation included, and natural yeasts. No sulphur is added – during vinification, maturation, or at bottling. Matured 36 months in old barrels on its fine lees, and bottled without filtration. The estate is certified organic and biodynamic by DEMETER.

There Sébastien works his soils with horses, uses zero chemicals in the vines, and farms biodynamically.
