100% Gamay. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Soils: sand with flint and Sologne clay. Harvesting by hand, careful grape sorting in the vines, well managed yields: 25 hl/ha. Vinification: harvesting of whole bunches, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Bottled in February 2020.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat, Hervé and his 25-hectare estate nonetheless have nothing to be shy about.
