Primarily Sauvignon, and the last of the press wine from the estate’s other white grapes. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Soils: sand with flint and Sologne clay. Harvesting by hand, careful grape sorting in the vines, well managed yields: 25 hl/ha. Vinification: direct pressing, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Bottled in February 2019.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat, Hervé and his 25-hectare estate nonetheless have nothing to be shy about.
