A sparkling wine made of 100% Chenin. From vines between 30 and 70 years old, planted on limestone and very rocky soils. Certified organic farming. Vinification: direct pressing, the fermentation starts in vats and casks, then the juice is racked and bottled to continue its fermentation, matured on laths for 36 months at a constant temperature of 12°C, disgorged and bottled with zero dosage.
