A blend of 60% young Gamay vines including some Gamay teinturier (literally ‘dyer’s’ Gamay, once used to add colour to wines), and 40% Pineau d'Aunis from vines farmed biodynamically and planted on flinty clay soils in the commune of Pouillé. Vinification: the two grape varieties are fermented separately in vats, with two weeks of maceration, and are then blended at pressing. Maturation is done half in vats and half in demi-muid barrels. Bottled without filtration, without fining and, of course, without sulphur.
