85% Pinot Noir and 15% Gamay from 29-year-old vines grown organically and planted on flinty sandy soils. The harvest is done by hand, the grapes sorted in the vineyard, and the yields kept under control. Vinification: the grapes (2/3 destemmed and 1/3 whole bunches) are macerated 6 months in Georgian amphorae (qvevri) of 800 and 1000 litres, followed by an additional 3 months of maturation for the wine alone. Bottled with a microdose of sulphur. Only produced in magnums!
