A cuvée of Chenin from two parcels: in the first, 80-year-old vines are planted on the first slopes, in shallow soils of limestone pebbles; the other parcel is planted in terraces with vines about fifteen years old, a site inaccessible to machines and thus ploughed by horse. In the winery: direct pressing, indigenous yeasts, fermentation in barrels, and bottled in early July 2019. A pinch of sulphur at bottling, for a total SO2 of less than 50 mg/l.
Tanguy Perrault, child of the ’75 vintage, obtained a BTS certificate in viticulture/oenology, spent time as a vineyard worker in Bordeaux, and even became cellar master at an estate in Vouvray.
