A blend of 75% Chardonnay and 25% young 5-year-old Savagnin vines farmed biodynamically and planted on granite soils over white and red quartz. The estate is certified biodynamic by BIODYVIN. In the winery: a few hours of maceration, and 10 months of maturation in ovoid vats. The lees are stirred continuously by an internal vortex-like current unique to these eggs-shaped containers. Neither fined nor filtered, with a light dose of sulphites at bottling, for a total of only 15 mg/litre of free SO2.
