A 100% Chenin cuvée, from very old vines, some more than 100 years old (!), cultivated organically and planted on the terroir of Montlouis-sur-Loire, with clay and flint soils over limestone bedrock. Yields are kept low, and the grapes are harvested by hand. Vinification is approached with the same philosophy found in the vineyards, which is to say natural and without artifice: direct pressing, transfer into barrels that have seen several wines, followed by fermentation and maturation. Bottled on the estate without fining or filtration.
Frantz Saumon is one of those winemakers who are already well established on their terroir, but who actually arrived in the wine world by chance... Originally from Berry, this former forester who worked in Canada gave up everything to devote himself to his passion. This is the 90's... what a long way we have come!
