100% Sauvignon from 35-year-old vines farmed organically and planted on a 1.4-ha parcel on a flinty clay soil over chalk. Yields are around 40hl/ha. Viticulture and winemaking are 100% natural: direct pressing, vinification and maturation 6 months in Burgundian oak barrels. Neither fined nor filtered, with just a micro-dose of sulphur at bottling.
