One of our favourite cuvées from Jonathan, a surprising wine with a nose of spice, blond tobacco and black fruit. The palate is powerful yet perfectly balanced, with a lovely acidity that promises this will age superbly. Try to be patient with this one!

100% Cabernet Franc from a single, 60-year-old biodynamic vineyard situated mid-slope on the western side of the Puy Notre Dame hill, with shallow, stony, clay-limestone soils. Harvesting is done by hand with small crates. Vinification: the grapes are 100% destemmed, followed by 3 weeks of maceration in vats, gentle extraction, manual pressing in a vertical press, transfer by gravity into 225-litre twice-used barrels, 14 months of maturation in underground cellars, then 7 months in vats. Neither fined nor filtered, and just a microdose of sulphur.
