Blend: 85% Pinot Noir and 15% Gamay, from a parcel grown on a slightly richer soil. The vines are 20-40 years old, grown on a soil of sandy clay and flint. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines, well managed yields: 25 hl/ha. Vinification: harvesting of whole bunches, 20-day maceration, punching down of the cap, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Matured 8 months in traditional and demi-muid barrels, bottled with 1 to 1.5 g of sulphur.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat, Hervé and his 25-hectare estate nonetheless have nothing to be shy about.
