A 100% Melon de Bourgogne cuvée, the grapes were purchased from the winegrower Alain Grippon who is based in the Muscadet area of La Chappelle-Heulin. The vines are farmed organically and harvested by hand when ripe, with controlled yields. The vinification is completely natural and without any additives: direct pressing, transfer to 400-litre barrels for fermentation and maturation, the malolactic fermentation taking place as well. No fining or filtration, and just a microdose of sulphur at bottling at the beginning of June 2019.
