A blended cuvée of 2/3 Menu Pineau and 1/3 Sauvignon, from vines certified organic and planted over the first slopes of the Vallée du Cher, on soils of clay limestone and sand over clay. Grapes are harvested by hand when ripe, with yields of 40hl/ha. Vinification: direct pressing, gentle settling, indigenous yeasts, maturation for 6 months in conical vats, with the wine undergoing its malolactic fermentation, with a touch of residual sugar remaining (2,5gr/l). Vinified entirely without additives, and only a micro-dose of sulphur at bottling.
Olivier Bellanger, child of the '78 vintage, grandson and nephew of vignerons, lives in Monthou-sur-Cher. His career started down a rather traditional path, working 10 years as a vineyard worker at classic estates such as Domaine Philippe Tessier, where the soil is worked efficiently and with respect.
