An organic blend of 90% Pineau d'Aunis and 10% Gamay, from vines planted in 2010 on flinty clay. Harvested by hand when just under-ripe to maintain the tart and peppery expression of the Pineau d'Aunis grape. Yield 35 hl/ha. Vinification: semi-carbonic fermentation of whole bunches with indigenous yeasts, maceration for 10 days, no punching of the cap, and infrequent pumping over – just a light sprinkling of the cap. 3 months of maturation in fibre vats, and blending of press juice and free-run juice. Only 1.5 g/hl of sulphur at bottling.
Olivier Bellanger, child of the '78 vintage, grandson and nephew of vignerons, lives in Monthou-sur-Cher. His career started down a rather traditional path, working 10 years as a vineyard worker at classic estates such as Domaine Philippe Tessier.
