A 100% Menu Pineau cuvée, from young vines grown on a siliceous-clay soil. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines, and low yields.. Vinification: direct pressing, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Matured 8 months in demi-muid barrels, bottled in August 2019 with a micro dose of sulphur.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat, Hervé and his 25-hectare estate nonetheless have nothing to be shy about.
