100% Chenin, from vines farmed organically and planted on clay-limestone soils. The grapes are harvested by hand. Vinification: direct pressing, fermentation in 400-litre barrels, transfer to bottles in February 2019 with 25 grams of residual sugar, second fermentation in the bottle, then 18 months of maturation in stacks. Disgorged at the estate in April 2020, with three grams of residual sugar remaining. ZERO sulphur!
