100% Sauvignon, cultivated on Portlandian-era limestone (135 million years old), with a thin layer of very rocky, clayey sand soil which brings great roundness to the wines. Vines planted in 1977. As for vinification, there's zero technological or oenological meddling: indigenous yeasts, no added enzymes, the wines are neither fined nor filtered. Pierre Précieuse receives a minuscule dose of sulphur at bottling: 1 g/hl. Yields: 35 hl/ha. Matured 14 months in vats. The estate is certified organic and biodynamic.
