A 100% Pinot Noir cuvée from vines farmed organically and planted on clay-limestone soils in the commune of Pouillé. The grapes are harvested by hand, of course, followed by maceration of whole bunches for three weeks, and slow and gentle pressing to preserve the fruit. Fermentation is completed and the wine is matured for one year in barrels that have seen several wines. Bottled without fining or filtration, and always without sulphur.
