A 100% Pinot Noir, made from purchased grapes, from vines farmed organically and planted in Saint Aignan sur Cher, on clay and limestone soils. The grapes are harvested by hand, and the yields are controlled. Vinification: three weeks maceration of whole grape bunches in small vats, gentle pressing, about 8 months of maturation in barrels that have seen several wines. Neither fined nor filtered, with just a microdose of sulphur at bottling.
