100% Sauvignon, from 50-year-old vines, facing southeast on a superb terroir of red clay and flint stone in Amboise. The vines are certified organic by ECOCERT and biodynamic by BIODYVIN. The grapes were harvested by hand, on the 3rd of September 2018, with a sorting table set up in the vineyard! Vinification: a delicate, long pressing of grapes with indigenous yeasts, the juice then placed in vats and matured until spring on its fine lees.
