100% Melon de Bourgogne from 60-year-old vines, undergoing organic conversion for this vintage as the vines were taken over in 2020. The plot is 60 ares, planted on sandy-loam soils over Gabbro. Hand-harvested in crates, gently pressed, fermented and aged for two months on lees in vats. It's a primeur wine! Bottled at the Estate, without fining nor filtration, with only 15mg/liter total SO2.

Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3.22-hectare vineyard in Maisdon-sur-Sèvre, Muscadet.
