100% Sauvignon, from vines farmed organically and planted in the commune of Thésée, on clay-limestone soils. The grapes are harvested by hand. Vinification: direct pressing, transfer to barrels that have seen several wines for fermentation. The wine is matured for 12 months. Neither fined nor filtered, with just a microdose of sulphur during racking, about three weeks before bottling at the estate in mid-June of 2019.
