100% Pinot Noir, from vines farmed organically and planted in Cheverny, on sandy soil. The cuvée was downgraded to Vin de Francebecause there is no Gamay in Pierre-Olivier’s parcel. The grapes are harvested by hand. Natural vinification: three weeks of maceration with whole grape bunches, gentle pressing, maturation in 400-litre barrels that have seen several wines. Bottled in April 2020 with just a microdose of sulphur.
