A blend of 75% Cinsault (from 86-year-old vines) and 25% Grenache from 45-year-old vines, all planted on clay-limestone soils in the commune of Puéchabon in the Terrasses du Larzac appellation. Harvesting is done by hand, with low yields of 12 hl/ha. Natural vinification: the two grape varieties macerate separately as whole bunches for 60 and 90 days, followed by blending, then three years of maturation in old 500-litre barrels. Bottled without fining, filtration or added sulphites, then aged in the bottle at the estate for an additional two years.
