An aromatic nose with hints of pear, bergamot and citrus fruit. Palate: beautiful structure, the three grape varieties complement each other perfectly – soft, full, and round, with a lingering salty aftertaste. Bouquier is one of ancient names the mas was once known by.

A blend of 1/3 Vermentino, 1/3 Grenache blanc and 1/3 Roussanne, from vines farmed organically and planted on clay and limestone soils at the foot of Mont Ventoux, at 350 metres, on the south side. The grapes are picked by hand, followed by natural vinification without any additives: direct pressing, 36 hours of settling, one month of maturation in large, century-old terracotta amphorae. Neither fined nor filtered, with just a microdose of sulphur at bottling.

Thomas Ayoun and Marie-Sophie Jullien – sister of Thomas Jullien of Ferme Saint-Martin – have after five years of work given new life to the Ayoun family mas (the Provencal word for a traditional family farm) located at the foot of Mont Ventoux, 20 minutes east of Carpentras. And though 2019 was only their first vintage, the wine is redolent of talent – one of our discoveries of the year!...
