100% Clairette, from a single parcel of organically farmed vines, planted on white clay facing north, which gives the fruit great freshness and good acidity. The grapes are picked by hand at maturity, with tightly controlled yields. Vinification: direct pressing, 24 hours of natural gravity settling, two months of maturation with stirring in large, century-old, 2000- to 4000-litre terracotta amphorae. Neither fined nor filtered, with just a microdose of sulphur during bottling at the estate.

Thomas Ayoun and Marie-Sophie Jullien – sister of Thomas Jullien of Ferme Saint-Martin – have after five years of work given new life to the Ayoun family mas (the Provencal word for a traditional family farm) located at the foot of Mont Ventoux, 20 minutes east of Carpentras.
