A 100% Syrah cuvée, from 30-year-old vines, certified organic and biodynamic, grown on a clay-limestone terrace in the commune of Mercurol. Yields 20 hl/ha. Vinification: grapes are 100% destemmed, gently pressed, placed in vats 28-32 days with indigenous yeasts and punching down of cap. Juices are moved by gravity, fermented 28-32 days in new demi-muid barrels and matured 24 months on fine lees in 16-hl egg-shaped cement vats. Racked, filtered and bottled on August 31st2018, with ZERO sulphur added.
