Michèle’s son, Maxime François Laurent, has set up a small structure to buy grapes from local vignerons who farm their vines organically. This cuvée is a blend of 50% Grenache Blanc and 50% Bourboulenc, from 30-year-old vines planted in the commune of Montbrison sur Lez, on clay-limestone and sand soils. The grapes are harvested by hand, with sorting in the vineyard, and yields of 40 hl/ha. Direct pressing, fermentation and six months of maturation in stainless steel vats. Neither fined nor filtered, and just a micro dose of sulphur.
