Viognier Chasselas - 2018 - Paul Estève

An orange wine with powerful notes of bergamot, citron, aniseed, and cut grass... Palate: surprising texture, there is none of the tannic, even astringent character that you often see with this kind of vinification. Lovely bitter notes. A captivating cuvée that will leave no one indifferent!

Blend: 50% Chasselas (from 5-year-old vines), 50% Viognier (from 20 year-old vines) grown on black mica and granite soils, at 450 meters altitude. The estate is certified organic by ECOCERT. The vines are farmed naturally using plant-based treatments, and the soil is ploughed by horse. The grapes are harvested by hand, and carefully sorted. Vinification: for the Viognier, carbonic maceration 7 days. For the Chasselas, maceration for 10 days, fermentation and aging for 1 year in 400-liter amphorae. No additives, zero sulphites, no filtering, and no fining.
