A blend of 50% Macabeu and 50% Grenache Gris from vines farmed organically and planted on schist soils. The vineyard is an isolated island of grapevines surrounded by scrubland, constantly stirred by sea breezes and the Tramontane. Vinification: harvested with small crates, the grapes are cooled before being pressed and transferred into vats by gravity, followed by a low temperature fermentation... Juste Ciel (literally, ‘Just Heaven’), is matured 6 months, with zero sulphur.
