A Côtes Catalanes of 100% Grenache Noir, grown on a limestone marl terroir. The vines are 90 years old and farmed organically. The yield is 25 hl/ha. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Vinification: maceration of whole bunches for 15 days in concrete vats, with indigenous yeasts. Maturation: 14 months in large barrels and 10 months in bottles at the estate. Bottled by gravity, without fining or filtration.
