La Tête dans le Cep - 2019 - Delphine et Yann Bouvier

A whiff of La Tête dans le Cep (or “Head in the vine”) is a dive headfirst into fruit! A heady nose indeed, of black fruits, especially blackcurrant. The palate is well balanced, with very light tannins, making this an easy-drinking glouglou wine, nonetheless boasting lovely structure.

A blend of 80% Carignan, 10% Grenache and 10% Syrah, from vines farmed organically, planted on red schist soils on a two-hectare parcel in Latour-de-France: a parcel acquired with the help and collaboration of all the couple’s friends! Vinification: the Syrah is harvested and de-stemmed 10 days before the other two grape varieties and used to create a natural fermentation starter, then everything macerates for 4 days before a gentle pressing, and maturation in vats. Bottled in March, without fining or filtration, and just a microdose of sulphur.
