60% Persan and 40% Mondeuse Noire, from vines grown on a soil of schist and mica on the Coteau de Cevins. Cultivated organically, but no more, in order to ensure sufficient volumes in this difficult region and the continuation of this noble enterprise on which Brice has embarked. The extreme slope (as steep as 60%) does not allow for the use of any machinery. Yields are only 20 hl/ha. Vinification is done in vats, with a maceration lasting 2 to 3 weeks, indigenous yeasts, and maturation for 12 months in barrels of 2 or 3 wines, followed by light filtration. Only 1500 bottles produced.
