100% Ondenc, a grape variety so rare, less than 5 ha remain in France. From 15- to 20-year-old vines, farmed biodynamically, certified organic and biodynamic by Demeter, and planted on a limestone plateau. Yields are around 35 hl/ha. The grapes are harvested early to keep alcohol levels under control, as this grape variety develops sugars quickly. Vinification: direct pressing, slow fermentation in vats, then in old 225-litre barrels for 9 months. Very light filtration before bottling, not fined, and a total SO2 of around 30 to 40 mg/l.
