100% Ondenc, a grape variety so rare, less than 5 ha remain in France. From 15- to 20-year-old vines, farmed biodynamically, certified organic and biodynamic by Demeter, and planted on a limestone plateau. The grapes are harvested by hand, quite early to keep alcohol levels under control, as this grape variety develops sugars quickly. Natural vinification, but Patrice keeps his secrets close! Direct pressing, slow fermentation starting in tanks, then aged in old barrels. Depending on the vintage, sometimes a micro-dose of SO2 added at bottling.
