Blend: 50% Chenin from young vines planted in the Aveyron on schist, and 50% Aligoté from grapes bought from a friend of Juilen Guillot in Mâcon-Pierreclos, from 40-year-old vines farmed biodynamically. Nicolas harvests and presses the grapes in Burgundy and then blends the juices at home. Vinification: direct pressing in an old Burgundian vertical press, then fermentation and maturation in barrels that have seen several wines. Bottled at the estate in June 2020. Neither fined nor filtered, with just a microdose of sulphur at bottling.
Nicolas Carmarans took his first steps into the world of natural wine with his restaurant Café de la Nouvelle Mairie in Paris, starting in 1994. It became one of the pioneering flag bearers of natural wine in the capital, but as the years passed, more and more Nicolas felt the call of the vine...
