A blend of 75% Tannat and 25% Cabernet Sauvignon, from vines grown organiccaly and planted in 1990. The estate was certified organic in 2015 and DEMETER in 2016 (the only certified biodynamic estate in Madiran). Harvest: meticulous sorting, hand-picked with small crates. Vinification: two weeks of maceration in cement vats, pumping over, soft pressing, aging in vats and in casks that have seen several wines. Little sulphur.
Céline Oulié, 35 years old, is based 10 km west of the village of Madiran. In 2012, she decided to leave her position as an industrial and environmental risk management engineer to spend the following year training alongside Loire vignerons oriented towards organic/biodynamic winemaking, such as Sébastien David.
