This cuvée, which not long ago was made as a blend, is now a 100% Fer Servadou, due to frost... From a massal selection of old, 55-year-old vines, farmed organically and planted on red sandstone soils rich in iron. Vinification: two weeks of maceration with whole bunches, crushing by traditional foot treading, gentle pressing, blending of free-run juice and press juice, and nine months of maturation in barrels that have seen several wines. Bottled in June 2020. Neither fined nor filtered, with just a microdose of sulphur.
