Résurgences - 2019 - Maya Sallée et Nicolas Fernandez
Domaine La Calmette
A rare wine – and our favourite during the tasting… The nose is powerful and complex with notes of flowers, white fruits and spices. The palate is lean and long, with a very subtle finish of nuts and curry.

A blend of several white grape varieties grown on a 1/2 ha parcel – Noual, Sauvignon, Chenin, Sylvaner… The vines, 20 years old, and farmed organically on clay-limestone soils at the top of a south-facing slope. The grapes are harvested by hand with crates, followed by a short maceration, pressing in a vertical press, and 2 years of fermentation in old barrels and in an Alsatian foudre, during which a veil of flor forms over the surface of the wine. Bottled September 10th 2021 without fining or filtration, and just a microdose of sulphur (1 gr/hl).
