Blend of Merlot, Cabernet Franc and Cabernet Sauvignon from old vines grown organically and planted on clay and limestone soils. The grapes were bought to Benoît Perissé from Fontaine des Grives in Thénac, and to Marc Vandendriessche of Clos des Terrasses ins Sigoulès. Separate vinification by varietal: 50% whole bunch, macerated for 10 days, and 50% de-stemmed, macerated 4 days. Matured in cement vats for 6 months, then blended. Only a micro dose of sulphur added during maturation. Bottled in the spring.
