100% Pinot Noir from organically grown vines, this is a collaboration with Juilo Denoso, whose vineyard is located in Las Dichas in the Casablanca Valley, western Chile. Clay-granitic soils. Vinification: 40% whole bunches, indigenous yeasts, aged in concrete eggs and vats for 6 months. Bottled without fining or filtration, no added sulfites.
Dominique Derain, a child of the 1955 vintage, born at the Hospices de Beaune, was originally trained as a barrel maker. In 1988, he settled in Saint-Aubin on a modestly sized estate with about 6 hectares of vines, certified organic since 1989. He no longer advertises any certifications on his bottle labels, yet his farming methods haven't changed, including the biodynamic preparations....
